Buffalo Meat Chili

There are a lot of different things you can do with chili. The formula is pretty basic; meat (or sometimes vegetables or meat substitutes) along with spices, hot peppers and more often than not, tomatoes or tomato sauce. From here, you can take the recipe in all kinds of different directions, as you will see in the following buffalo chili recipe.
Instead of the usual ground beef, this chili recipe uses ground buffalo (aka bison) meat, which is leaner and has a distinctive flavor which works wonderfully in chili. If you have never tried buffalo before, this recipe makes a great introduction.

Buffalo meat’s hearty flavor makes it a great alternative to ground beef which you may enjoy so much that you’ll start using it instead of beef in all of your chili recipes. Buffalo and Black Bean Chili with Brown Rice

Ingredients


2 ½ pounds ground buffalo meat
2 cups cooked brown rice
1 large onion, diced
3 cloves garlic, minced
2 jalapenos, diced
1 red bell pepper, diced
1 can (28-oz) tomato puree
½ cup chili powder
1 tablespoon ground cumin
½ tsp ground chipotle pepper
¼ tsp cinnamon
1 teaspoon cayenne pepper
2 cups beef broth, or water
2 (15 oz) cans pinto beans, drained and rinsed
1 tbsp vegetable oil
Salt and black pepper, to taste
water as needed

Instructions


Brown the ground buffalo in a little oil along with the onion, garlic, bell peppers, and jalapenos. Once the buffalo is browned and the onions, garlic, and peppers are tender, it is time to add the spices.
Cook, stirring regularly for another 1-2 minutes until the spices become aromatic.
Add the tomato and beans and cook, uncovered for about 30 minutes.
While the chili cooks, cook 2 cups of brown rice in 4 cups of water; bring to a boil and then reduce to a simmer, cooking covered for about 20 minutes, or until the water is absorbed and the rice is tender.
Serve the chili over brown rice and enjoy!
