Easy Apple Cake Recipe

Ingredients

1 cup all purpose flour
¼ teaspoon salt
½ teaspoon baking powder
⅔ cup white sugar
½ stick unsalted butter, at room temperature
1 egg
1 teaspoon vanilla extract
1 cup peeled, chopped apple
½ teaspoon baking soda
½ cup buttermilk
½ teaspoon ground cinnamon, plus extra for sprinkling
Light brown sugar, for sprinkling
Fresh mint, for garnish (optional)
Cinnamon sticks, for garnish (optional)

Instructions

Preheat the oven to 400 degrees F.
Grease and flour an 8 inch round cake pan.
Mix together the baking soda, cinnamon, flour, baking powder and salt in a bowl.
In another bowl beat the sugar and butter for a couple of minutes until fluffy and pale.
Add the egg and vanilla and beat well.
Beat in about a third of the flour mixture, and then add half the buttermilk.
Beat in some more of the flour mixture, then the rest of the buttermilk.
Beat in the last of the flour mixture.
Transfer the batter into the prepared cake pan and use a spatula to smooth the top.
Scatter the chopped apple over the cake and sprinkle the brown sugar over it.
Sprinkle some ground cinnamon on top of the apple cake and bake it for about half an hour or until the top of the cake is golden brown and a toothpick comes out clean.
Let the cake cool for 10 minutes in the pan, and then unmold it on to a wire rack.
Garnish with the fresh mint and cinnamon sticks, if you like, and serve with whipped cream or ice cream and perhaps some dulce de leche.
