Mexicali Nachos with Beef and More

I want to start out with a brief note of something I did last year for the buildup of the big fifth of May holiday where I rewrote the words to the famous Christmas jingle the twelve days of Christmas with a distinctly Mexican holiday flare if you missed day one last year you can find it here. I know I am a bit behind as I have had some health issue get in the way so sorry.
Also another slight site note I am doing some experimenting with the ad layouts and while most sites are adding more I am actual removing some and playing around with the layout. I am doing this for one important reason – “SPEED” see the sites all of their number one user is me and I spend a load of time on line and if I can speed my sites up I spend less time waiting for loading and thus work more efficiently. Now behind the scenes I already use one of the fastest and most robust servers available which makes our sites speed scores very impressive but I am a geek at heart and speed is something we regularly test for and adjust to squeeze every bit of it out of the sites as we can. Ads are a necessary thing to pay for this but they are also one of the things that slow any sites load time down so removing them is an instant speed gain.

So while others are loading their sites in loads of ads I am doing just the opposite and I hope you like the new layouts. See I am still a user too and I understand none of us likes them but that serve does cost money and my silly kids have this thing about eating sorry I know the nerve of them so please understand I do think of every user and that includes me. As for the upcoming holiday it is the third biggest food day in America only behind Thanksgiving and the Superbowl and to think it is really a Mexican holiday although celebrated more north of the border then south. Maybe they should think of that before anyone decides to build a wall.

I hope you have been enjoying the split from the authentic and traditional and been enjoying my one woman’s campaign to spread great taste all over and not worry about what to call it and just eat great food. I have so many more great recipes with this theme in mind I wish to share with you and hope you will come along for my journey to food freedom and the freedom of losing the guilt over what we call it and close your eyes and sample it before you judge it this or that. Also by the way you do not have to wait for a game night to enjoy these they can go with anytime you just want to sit back and enjoy a tasty treat.

Beef, Beans, Tomatoes and Cheese Nachos


There are many ways to make nachos and as for this recipe it is one of the more simple and basic versions you can do them so many ways I could probably fill half the site with different combos of ingredients.

For the Mexicali Nachos with Beef and More:
1½ pounds ground beef
1 can Libby's Organic Dark Red Kidney Beans
16 ounces Mexican blend cheese, shredded
1 sweet onion, diced (optional)
1 can RO*TEL Diced Tomatoes & Green Chilies
2 tablespoons dark soy sauce
2 tablespoons Worcestershire
1 teaspoon granulated garlic
1 teaspoon Chipotle chili powder
1 bag Doritos Flavored Tortilla Chips, Nacho Cheese
Salt and pepper to taste
To Serve the Mexicali Nachos with Beef Suggestions:
Greek yogurt or Sour cream
Blair's Mini Death Hot Sauce


To Make the Mexicali Nachos with Beef and More:
This step is optional and only necessary if using the onion if so heat a skillet over medium high heat, and add some olive oil. When it is hot, add your diced onion, and allow them to sauté until they are translucent, about four to five minutes.
When the onions are done (if using) next add the grown beef and stirring frequently and using a wooden spoon break it up into small piece if not using the onion you will of course need to heat the pan. Drain the grease with the use of a colander and then return it to the pan and add the tomatoes and beans.
Add the other seasonings.
Simmer until most of the liquid cooks off.
Preheat your ovens broiler.
In a large roasting pan add a layer of the chips and then add a generous amount of the beef mix to this randomly on top and cover with an ample amount of the cheese repeat this process until you have used all the ingredients.
Set the oven rack to the middle location and place the pan under the broiler and allow to sit in the oven until the cheese melts and is slightly browned.
Remove and transfer to serving plates.
To Serve the Mexicali Nachos with Beef Suggestions:
Give them a few shots of your favorite hot sauce (you control the heat) and serve with any of the following as preferred Greek yogurt, sour cream, salsa, and "Blair's Mini Death Hot Sauce".

When it comes to sports food and things we associate with game day parties Nachos are among peoples favorites and why wouldn’t they be they have the best of what we love about Mexican cuisine or Mexican inspired “I’m pretty sure that it is a this side of the border dish” but whether it is north or south of the border really doesn’t matter anymore as far as this site is concerned we love them and suggest eating them for one important reason they are so much darn fun to eat and bottom-line is they just taste so good. Now this is merely one suggestion on how you can make a nice combination of nacho ingredients they are open to loads of inspiration and interpretation too.
