Tex-Mex Iron Skillet Chicken Fajitas with Peppers

Ok my line is drawn I have declared full out war on stereotype food snubs. The plain fact is I like chicken and I like fajitas so I am going to make one with shh… chicken… If you are willing to cross the food snub line and hold a protest with me come on welcome… Hell no we won’t go… Oh wait my husband is having flashbacks on me from across the room. The fact of the matter is I have toyed with the food line to this point but with this recipe I declare full out war of the food borders.

Want chicken on your fajitas then come on board once you except chicken on fajitas there is a whole other world of possibilities that opens up. Dare I think maybe you might drink white wine with beef why hell because you like white wine better than red (me too) and after all we only get to eat a few times a day we might as well enjoy each of them.

Heck if someone can deep fry an Oreo I can put chicken in fajitas without fear of the food police knocking down my door with a food warrant. I know I am being very sarcastic and kind of ridicules isn’t it well that is the whole thing when you put up preconceived food barriers to what taste good. Food should be judged by the only criteria that matters does it taste good. I have a strange idea to make a bacon fajitas I mean I love bacon (anyone miss that point yet) and fajitas are onions and peppers usual so why not bacon I’m onto something.

Ok I am kidding a bit on the bacon thing but chicken, shrimp maybe even scallops, pork oh try it if it works go for it if not back to the food drawing board and another attempt to get it right. Now just so you’re not too worried I have five built in food critics that ground me so no worries that I go to deep of the food diving board. But I mean look at that picture and tell me it doesn’t at least a little bit make you hungry and I will show you a liar that picture and dish is just plain awesome looking and trust me it taste even better.

Iron Skillet Chicken Fajitas Tex-Mex Style


 Ok up front I like chicken there I admit it my guys would rather have beef but I like chicken and want more verity in my cuisine so I am going to make chicken fajitas and if you don't like it click away if you do on the other hand enjoy the recipe.

For the Tex-Mex Iron Skillet Chicken Fajitas:
6 chicken barest, boneless skinless, grilled and cut into strips
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 orange bell pepper, sliced
1 green bell pepper, sliced
1 red onion, sliced
6 flour tortillas, burrito-size
1 teaspoon chili powder
1 teaspoon cumin
1 teaspoon granulated garlic
2 tablespoons olive oil
Salt and pepper to taste
To serve the Tex-Mex Iron Skillet Chicken Fajitas:
6 Roma tomatoes, seeded and diced (optional)
Sour cream (optional)
Guacamole (optional)
Salsa (optional)


To Make the Tex-Mex Iron Skillet Chicken Fajitas:
Preheat the grill to high.
Pat dry the chicken then rub it with some olive oil and season with salt and pepper, next combine the spices together and mix well take the mixed spices and rub it on the chicken breast and place in a plastic bag in the refrigerator for 15 minutes.
Remove the chicken from the fridge and grill on each side for about four to five minutes a side or just until the juice run clear.
Remove to a clean plate and allow to rest for ten minutes.
In the mean time place some olive oil in a cast iron pan on medium high heat and add all the vegetables and sear them for about three to five minutes to take some of the crispness out of them they should still be somewhat raw cooked about 70% of the way.
Slice the chicken into thin strips and add it for a minute to the veggies and mix well until everything is well blended and remove from the heat.
To serve the Tex-Mex Iron Skillet Chicken Fajitas:
Place the flour tortillas on a baking sheet into a 375 degree F. preheated oven for a minute or two to warm them through.
Place a tortilla on a plate and top with some of the chicken and veggie mixture.

Top With:

Roma tomatoes, seeded and diced (optional)
Sour cream (optional)
Guacamole (optional)
Salsa (optional)

Ok disclaimer to all the Tex-Mex, Mexican food purest shut up I don’t want to hear that fajitas are flank/ skirt steak bla bla. That is like saying chicken fried steak isn’t fried chicken ah dah but it still taste great and therefore I am going to eat it. If you haven’t learned anything about me by now it should be this I don’t care – you want to eat freaking steak fajitas every time go right ahead but for me and I bet a few others out there we would like chicken and dare I say seafood every now and then. Forget the labels and arbitrary lines in the sand just eat it.
